Who loves Blueberry Muffins?! We all know that kids need their nutrition to grow strong and be happy little minions.  Erika Peterson was kind enough to share this recipe with all of us! "My kids love grab 'n' go snacks and hey, I love them too! Nothing better than having a healthy, yet tasty snack on hand during a busy day! These muffins are loaded with superfoods that will keep those little tummies full and will provide us moms with a good source of sustainable energy... as a mom of 4, I know those little ones don't slow down for much so we've got to keep up!"

Lemon Blueberry Muffins  

Makes 32 muffins

90 cals | 3g fat | 10g carb | 6g protein per muffin

3 cups kodiak cakes

1/2 cup water

2 cups cottage cheese

1/2 cup honey

8 large eggs

2 Tbs. Coconut oil, melted

3 Tbs. Chia seeds

1 lemon, zest of

1 cup blueberries


1. Preheat oven to 350 degrees.

2. Add water, cottage cheese, honey, eggs, coconut oil and kodiak cakes to a blender. Blend until smooth. Transfer to a bowl. Stir in chia seeds, lemon zest & blueberries.

3. Fill greased muffin liners 3/4 full. Bake for 18 minutes. Store extras in the fridge or freezer. Enjoy!
